Summary
Lactobacillus brevis
Lactobacillus brevis is frequently used as starter culture in silage fermentation, sourdough and lactic-acid-fermented types of beer. In beverages obtained by alcoholic fermentation, lactobacilli may contribute to the quality of the product but may also cause spoilage.
